    • Cocoa – 50 gr.

    For the cream:

    • Sour cream (fat content not less than 20%) – 370 gr;
    • Boiled condensed milk – 370 gr;
    • Butter – 170 gr;

    For decoration:

    In a deep bowl, beat the egg with sugar with a whisk until the latter dissolves, add kefir and beat again. Add soda quenched with lemon juice to the resulting mass and mix well. Then add flour and cocoa, after mixing them. This way you can avoid lumps of cocoa. Mix the whole mass again well. The consistency of the dough should be similar to thick sour cream.

    Transfer the dough to a mold covered with parchment paper and send for 30-40 minutes in the oven, heated to 200 degrees. You can check the readiness of the biscuit with a thin long stick or toothpick. When piercing a completely baked biscuit, it will be dry.

    Leave the finished biscuit to cool in the form, then take it out, remove the parchment and leave it on the wire rack for some more time. Cut the cooled biscuit into three cakes.

    Next, you need to prepare the cream. To butter, softened at room temperature, add boiled condensed milk and beat with a mixer for several minutes until smooth. Then add sour cream to the mass and at low speed of the mixer mix the cream until smooth.

    Lubricate the cakes with cream and put them on top of each other, then cover the top and sides of the cake with cream. In order for the cake to soak, it must be removed overnight in the refrigerator. The finished cake can be covered with whites whipped with sugar until fluffy, forming waves.
