After New Year's Eve, food should remain in the dishes so that the next year is plentiful. The memory of the older generations was reflected in the Chinese New Year's meal. Usually, dishes prepared for the holidays by grandparents are prepared.

Fish is often served for family dinner on New Year's Eve, as the Chinese believe that fish brings prosperity and increases wealth. It is extremely important to serve fish with a tail and head – symbols of a good start and end of the year.

Chinese New Year's carp


  • Carp carcass – 1 pc ;
  • Two onions;
  • Garlic – 10 gr;
  • Ginger – 15 gr;
  • Soy sauce – 2 tbsp. l.;
  • Sugar – 10 gr;
  • Salt, vegetable oil.

Clean the fish and rinse it well. Make several cuts on the carcass, but try not to cut through. Rub with salt and grated fresh ginger and leave for twenty minutes to soak the fish in flavors.

Heat the oil in a frying pan, fry the fish until golden brown on both sides and remove. Cut the onion into half rings, chop the garlic, finely chop the ginger, fry in the same oil in which the fish was fried until the aroma appears and return the fish to the pan. Add some water, soy sauce and sugar. Stew the fish until done, about 20 minutes.

Chinese chicken


  • Chicken carcass;
  • One onion;
  • Five cloves of garlic;
  • Vegetable oil ─ 250 ml;
  • Sugar ─ 2 tsp;
  • Salt ─ 2 tsp;
  • Four cloves, peppercorns, coriander seeds, ground nutmeg.

Toast the cloves, black peppercorns, and coriander in a dry, hot skillet. This is done in order to reveal their aroma. Grind the heated spices with a teaspoon of salt and nutmeg. Wash the chicken and pat dry with paper towels. Rub the chicken with the seasoning and salt mixture inside and out. Place a whole peeled onion inside the carcass. Put the chicken in a bag and refrigerate for five hours.

After that, heat vegetable oil in a deep bowl, like a wok, or a cauldron, and put the bird back down. Fry until golden brown, then flip the carcass and repeat, basting the carcass with the same oil. Once the chicken is golden brown on all sides, take it out, drain the oil so that it remains on the bottom and throw five crushed garlic cloves into the wok. Then pour in 0.5 liters of hot boiled water. Bring the water to a boil, add salt and sugar to make a sweet-salty broth, and return the chicken to the pot. Simmer under a closed lid for about half an hour. Serve garnished with finely chopped cilantro and chili pepper flakes.

Chinese Jiaozi dumplings


For dough:

  • Flour – three cups;
  • Half a cup of hot water;
  • A third of a cup of cold water;
  • Vegetable oil – 1 tbsp. l.

For the filling:

  • Beef mince – 500 gr;
  • Beijing cabbage – 400 gr;
  • Green onions – 50 gr;
  • Grated ginger – 1 tbsp. l.;
  • Soy sauce – 1 tsp;
  • Ground black pepper.

Chop the cabbage very finely, or pass through a meat grinder. Finely chop the green onion. Stir in minced meat, cabbage and green onions. Add ginger, soy sauce and pepper.

Now prepare the dough. Pour the flour into a bowl, make a well in the center, pour in boiling water first, then cold water and add vegetable oil. Knead until a firm elastic dough is obtained. Roll out the dough into a tourniquet and cut into small pieces, as if preparing dumplings. Roll out each piece thinly. Spread the minced meat, moisten the edges of the dough with water and form small dumplings. Boil them for a couple of minutes 30 and serve with soy sauce, in which you can drop sesame oil for flavor.

Bonus: Longevity Noodles


  • Long wheat or rice noodles – 225 gr;
  • Sesame oil – 2 tbsp. l.;
  • Three cloves of garlic;
  • Soy sauce – 3 tbsp. l.;
  • Salt, sesame seeds, ground white pepper, green onion.

Cook the noodles by dropping them into boiling salted water. It usually takes about five minutes to prepare. Drain and rinse the noodles with cold water. Transfer to a large serving dish.

Whisk sesame oil, crushed garlic, soy sauce and salt and pepper. Pour the sauce over the noodles and mix well. Try it and adjust to your liking. Serve sprinkled with sesame seeds and finely chopped green onions.
