For supplying the French restaurant with its own produce, we have created a farm on cultivation of snails, and now — frogs, — says the entrepreneur from Lviv Andriy dzuban. — Our story began five years ago. Together with my business partner Artem AMISOM (started with them many different business projects), we came up with the idea to open a restaurant in which one of the products would be a key in the menu. It was necessary to choose such a product. A good idea suggested occasion: my friends are businessmen organized the collection of snails in the woods and meadows. Sold the catch to Europe. Once they gave me a bag of wild snails in the sample. It was during friendly gatherings in cafes, and we asked the chef to cook shellfish. Dish of them — snails Bourguignon and loved it. So came the decision to open a French restaurant.
We went to France in the snail gastronomic tour of local restaurants. There he learned that meals out of this clam cook a lot, they are very popular in Western Europe. After a while we opened a French restaurant in Lviv. About a year buying snails collected in nature. But not all of them of proper quality. To ensure that it is possible only in case, if you create a farm where the shellfish are grown in the science-based technology. This idea, as well as an elementary calculation that the clam meat from own production is much cheaper than store bought, pushed us to do the arrangement of the snail farm.
We went over the necessary knowledge in Europe — specialized farms. And soon another partner Orest Davydko — created in the Lviv region, your farm, and when it opened a restaurant for tourists. But is it possible to imagine French cooking without dishes of frog legs? Of course, they are in the menu of our restaurants in Lviv and on the farm. While use the meat of frogs, purchased abroad. But in the near future from imported, I hope, refuse, because he created a frog farm.
“Farm bought 40 pairs of frogs-producers. Each pair cost $ 100”
— For the new farm bought 40 pairs of frogs-producers, — says the entrepreneur Orestes Davydko. — Each of them cost almost $ 100. To admit, no matter how good the wah was not a hundred dollars for a pair they are unlikely to stand, but the delivery turned us into a serious amount.
— You for them a pond dug?
Yes, a small (four by eight meters) and small pond. About the same dimensions frogs and foreign farms. The fish didn’t run, aquatic plants not planted — there is no need. Pumped water from a well, cleared and fenced with mesh to the beach that Pets had a place to bask in the sun. Dug last year the pond had accumulated at its bottom a layer of sludge. Us is seriously worried, because it is necessary for normal wintering frogs. Buried in bottom sediments, amphibians hibernate. But, fortunately, they are excellent, we wintered.
Females bought abroad frogs, sold with caviar. Brought us amphibians in the late summer of last year. But females still have eggs in wearing — that’s what they do, if conditions for reproduction are not fertile. I think the catch is the water temperature — it is in the pond until warmed, as it should, but we repeatedly refilled with cold water from the well. But the water level has stabilized. So hopefully in the near future frogs will finally decide to lay eggs. And then, we will need to exercise the utmost care to take the time to catch and transfer the tadpoles to another prepared for them in the pond. And in fact, parents can easily eat the young.
— Than you feed the Pets?
— While they produce food on their own to catch insects. However, we provide it: set on the shore of the lamp with solar panels. Day they accumulate in their battery power, while after sundown we include them. Their light attracts midges. The remains of frogs to catch and absorb this abundance.
But I eventually plan to give the Pets food. Now study how it should be. Information about it very little. Farmers from Europe trying to keep it secret. By the way, to learn the breeding of frogs is almost nowhere — at least in our country. Those who are in Ukraine engaged in harvesting these amphibians for sale abroad, catch them in the swamps, on lakes. So the technology of cultivation of frogs have to learn on their own. We plan in the future to expand the farm. Expect to receive from 200 to 400 pounds of frog meat per year. This is sufficient for our restaurants in Lviv and here on the farm, where on weekends there are many tourists.
It is important that the meat of frogs of own production will cost us at least twice cheaper than imported ones. The price of this meat at our market — in the range of 600 hryvnia per kilogram.

“Serving dishes lagostina will cost 150-200 UAH”
— How much is a serving of food from lagostina in your restaurant?
— From 150 to 200 hryvnia. We offer visitors the meat of frogs with a variety of salads in breadcrumbs used in Japanese cuisine. Generally, abroad classic dish considered fried frog legs with garlic. From drinks it is best suited to them white wines.
— You have invited in restaurant of the French chef or sent her to study in France?
— I, along with our cook Catherine Magalys went on a culinary tour in Paris — to learn, to experience the atmosphere of restaurants serving frog legs. They are very popular not only in France, but also Belgium, Holland, Northern Italy and Spain. Such dishes are considered a delicacy in China and other Asian countries.
— You need a lot of money to open the frog farm?
— We received a grant in 50 thousand hryvnias. But this money is not enough, had to add from personal savings. You know, learning to grow snails, we began to help other people in business development. Any person can open a snail farm under our brand. We train, provide the brood stock of snails, help with equipment, feed and other materials. At the request of the farmer can guarantee to buy his crop. Thus, with our help, Ukraine has already created a lot of farms for breeding of snails. Perhaps, over time, will be able to provide help to those who want to open in Ukraine frog farm.
