If on Christmas Eve there should be 12 Lenten dishes on the table, then on January 7 it is already possible to set the table on a grand scale, but in compliance with some traditions.
The Orthodox Christmas table on January 7 should be set in compliance with some rules. Unlike the New Year's table, at Christmas, a tribute is paid to folk traditions, which means that dishes are served with history. This is a special set of dishes that have been served on the table for decades.
For example, on the traditional Orthodox Christmas table there must be kutya, it is eaten on Christmas Eve, after the appearance of the first star in the sky, and uzvar. They are also obligatory dishes on January 7.
If the New Year can be celebrated anywhere, then Christmas is a family holiday. On Christmas Eve and the next day, the closest people gather at the table.
Many traditions have been lost, but there is only one rule: the Christmas table should be richly laid. And it should have one whole dish that takes center stage. It is a symbol of unity, as Jesus Christ united the apostles.
So, on the Christmas table should be:

Baked duck with apples
- Duck – one carcass;

< p>Trim excess fat from the duck. It can then be melted and used for other dishes. Rub the duck carcass with salt, thyme and pepper inside and out. Mince the garlic and rub the duck with it as well. At the end brush the duck with honey. This will give it a beautiful shade and a pleasant taste.
Leave the duck for at least 20 minutes so that it is slightly saturated with aromas.
Apples should be taken strong and sour; when baked, they will turn out to be very tasty, absorbing the aromas of meat. Cut them into quarters, remove the seeds. Stick cloves into the quarters, no more than five pieces and stuff the duck with them.
Next, the duck can be baked in a duck, put it in a baking sleeve, or baked in a refractory form, covered with foil on top. You need to bake in the oven, heated to 200 degrees. The baking time depends on the power of the oven and the size of the bird, but it will take at least an hour and a half.
Half an hour before the end of cooking, cover the duck with potatoes, cut into slices and quarters of the remaining apples. Remove the foil from the duck, let it brown a little.
Traditionally, cabbage rolls are made from white cabbage, but we recommend trying Savoy cabbage. Its leaves are more plastic and soft, which means that it is enough to dip them literally for half a minute in boiling water, and its nutty taste will give the cabbage rolls an interesting shade.
Boil water in a saucepan, salt and add a little sugar to keep the cabbage leaves crispy. Separate the head of cabbage by leaf. Cut off coarse fibers. Dip the cabbage leaves in boiling water for literally half a minute. Savoy cabbage has a delicate leaf texture, so it's important to soften them, not overcook them.
Cut the onion and carrot into cubes. Carrots can be grated on a coarse grater. Put the rice to boil in the proportion: 1 part rice – two parts water. Boil five minutes after boiling. Then turn off the heat and keep covered for another 15 minutes.
Fry the onions and carrots in vegetable oil. And add to minced meat. Add boiled rice, salt and pepper, add your favorite herbs and seasonings, mix well and beat the minced meat.
Now take the cabbage leaves and wrap the stuffing in them. Place wrapped cabbage rolls in a mold. You can bring them to readiness in the oven, or on the stove. So choose: a baking dish, or a saucepan. Pour the cabbage rolls with a mixture of sour cream and tomato paste.
If you cook cabbage rolls in the oven, bring them to readiness at a temperature of 180 degrees for 45 minutes. If on the stove – then on a small fire, under the lid, for the same time.
- Carp carcass;
- One orange;
- Raisins – three tbsp. l.;
- Butter – 50 gr;
- Ground nutmeg, ground black pepper, salt.
Rinse the carp and gut it. Clean the scales and wash thoroughly again, dry with paper towels. Rub with salt, pepper and nutmeg. Roll out the foil and put the fish on it. Cut the butter into thin slices and the orange into slices. Cover the carp with oil and orange inside and out. Put the raisins, previously steamed in boiling water, inside the carcass. Wrap the fish in foil, preferably in two layers and bake in an oven preheated to 200 degrees for about half an hour.
Vareniki with cabbage
For choux lean dough:
- Flour – 350 gr;
- Hot water – 200 ml;
- Vegetable oil – 3 tbsp . l.;
- A pinch of salt.
For the filling:
- Sauerkraut – 400 gr;
- One small onion;
- Vegetable oil.
Knead the lean dough for dumplings. Heat the water until steam appears. Pour flour into a bowl, pour in hot water, throw a pinch of salt and add three tablespoons of vegetable oil. Stir first with a spoon, as the dough is hot, and then knead by hand. Dust with flour if the dough is too sticky.
Roll the dough into a ball, wrap in cling film and refrigerate for half an hour. And it's time to prepare the filling. Peel and finely chop the onion, fry in vegetable oil until golden brown. Add sauerkraut. It is better to cut it smaller so that it is more convenient to eat. Stew with onions for about 15 minutes.
Remove the dough, roll it thinly, cut out circles with a glass, put the filling and close up, beautifully, or, as it turns out, it will not affect the taste. Boil dumplings in salted water. Ready-made dumplings can be seasoned with fried onions, or just vegetable oil, so that they do not stick together.
- Flour – 200 gr;
- One egg;
- Sugar – 1 cup;
- Baking powder – 1 tsp;
- Butter – 100 gr;
- Grated ginger – 2.5 tsp;
- Ground cinnamon – 1 tsp;
- Clove – 5 pieces;
- Honey – 3 tsp;
- Ground cardamom – 1 tsp
Spices can be slightly warmed up in a dry frying pan to reveal their aroma, you can skip this step. Grind them in a mortar, or take ready-made crushed ones. Add finely grated ginger.
Pour in flour mixed with baking powder. In a separate bowl, mix soft butter and sugar. You can take less sugar if you do not want the liver to be too sweet. Add egg and honey, mix again. Add flour with baking powder. Knead the dough with your hands, roll it into a ball, wrap it in cling film and refrigerate for at least an hour.
After roll out the dough thinly, cut out the cookies: with molds, or just with a glass. Put on a baking sheet greased with parchment and bake in an oven preheated to 180 degrees. Remove as soon as the cookies begin to brown, this will happen in seven minutes.
