An Ecuadorian bioengineer has restored the formula for making a beer that was first brewed in 1566.
Ecuadorian bioengineer Javier Carvajal discovered a 450-year-old yeast sample in an ancient oak barrel, with which he was able to “resurrect” what is believed to be the oldest beer in South America, according to Phys.
Scientists believe that the first brewery in South America appeared in the monastery of the Franciscan monks in 1566 in Quito, the current capital of Ecuador. Historians believe that the monk Jodoko Rike, who first brought wheat and barley to Quito, was the first to start brewing beer according to a special recipe.
Javier Carvajal, from the Catholic University of Ecuador, himself comes from a family of brewers, and therefore became interested in the ancient Franciscan brewery in Quito. It was in the monastery of the Franciscan monks, the construction of which began back in 1537, and now this place is a museum, that the scientist discovered an ancient oak barrel.
After careful research in his laboratory, Carvajal discovered a tiny sample of 400-year-old yeast. After a long period of cultivation, the scientist was able to “resurrect” them.
“This is a real biological treasure, which is 450 years old. I think that this yeast was also used by the local indigenous people to make their alcoholic drink even before the arrival of the Spanish colonialists” , says Carvajal.
After that, the scientist found in one of the scientific journals a somewhat vague description of the Franciscan friars' beer recipe 16th century. It took him a long time to restore the missing information in the ancient recipe. After a series of experiments, Carvajal began to produce beer at home. He wants to release this drink for sale, but has not yet come up with a name for this beer, and has not yet estimated its cost.
