Ah! There are some appointments that are more difficult than others in the prefect's diary. This Tuesday, at tea time, Jérôme Bonet received in the salons of the prefecture about thirty artisan bakers and pastry chefs who came to present appetizing galettes des rois and kingdoms, each more tempting than the last. And, enthroned in a prominent place, the galette of Alexandre Boutry, a 37-year-old pastry chef, established in Marguerittes for four years, crowned best galette 2025.

“It won hands down, well above the others”,says Christophe Hardy, the president of the Federation of Bakers and Pastry Chefs of Gard, which represents 280 artisans “in love with their profession and proud of their know-how”.

Three days of meticulous work

The secret of his galette ? Alexandre Boutry reveals it with a hint of relish, “good ingredients, sugar, butter, a touch of vanilla and above all respect for all the steps. The puff pastry is very long. It takes me three days to make a galette…” He will sell around 2000 by the end of the month.

Before the tasting, Christophe Hardy recalled the beauty of the profession, full of love and proximity, “despite the unprecedented crisis we have been through and the 20% surge in the cost of raw materials”.

Badin, to celebrate the know-how of the profession, Jérôme Bonet confided that he crosses the city every Saturday and Sunday morning to go to his favorite baker, before tasting the champion's cake…
