Hoa Ly Restaurant Offers Vietnamese and Japanese Specialties

Hoa Ly Restaurant opened its doors in early November at 15, avenue du Muscat. It offers Asian, Japanese and Vietnamese dishes, and always authentic, from fried noodles to sushi.

“Everything is homemade on site,” explains Alain Nguyen. We offer this because it corresponds to a global demand: we eat Japanese or Vietnamese as we please. Some come for the sushi, others for the fish tataki or the fried beef with onions or the caramel pork which is the most ordered dish.” The Restaurant Hoa Ly provides many of the takeaway dishes that customers pick up or have delivered. The restaurant also has a nicely appointed 25-seat dining room for on-site tasting, which customers have already gotten used to using in the evenings and at weekends. In the restaurant business for 25 years in Aix-en-Provence and then in Mèze, Alain settled in Frontignan with his wife Hoa and his daughter Ly who gave their first names to the restaurant. “Everything is done during the day for the quality and freshness of the sushi. Everything that is fish is done at the last minute. Salmon, tuna, sea bream, sea bass: all fish can be transformed into sushi, the important thing is the know-how. The fish requires simple and clean cutting so as not to damage it. And I prepare the rice with a sweet, salty and vinegar sauce… which I will not reveal to you!”

For extreme freshness, the restaurateur buys his fresh fish several times a week. He also meets his Asian suppliers for specific products: rice, noodles, spices. “What we need is for people to come and try it. They will judge the quality and whether the cuisine suits them.”
