After reopening in mid-November, everyone has found their feet and stocked up on orders for the Christmas holidays. A positive assessment, at this stage, according to historic and new retailers. Midi Libre has gathered their feelings.
No respite for traders, in this highly strategic period for their turnover… Rest will come after the holidays. If the most important thing is over, the meal on Christmas Eve and Christmas Day, the course is now set for the 31st, New Year’s Eve… Where delicate dishes such as foie gras, seafood or even brie with truffles will flourish on the tables… Dishes which, for some, were purchased in the newly renovated Béziers market halls. Between the two holidays, a few shopkeepers gave their thoughts on this first period.

On the cheese side, Maria Hernandez, a newcomer, was pleasantly surprised by the friendly atmosphere that reigned in the covered market : “It was quite good-natured, relaxed, the customer takes his time. Everyone got started in advance and it went quite smoothly. The truffle brie, the Christmas comté matured for 46 months, and my favorite, Hercule, a double milk cheese, sheep and goat were all very popular.”
“People complain that it's expensive”
On the stand of the greengrocer Escrihuela, present in the old version of the market halls, the assessment at this stage is positive. Corinne Escrihuela details:“We worked very well last weekend, until Tuesday, Christmas Day. The mangoes, lychees, Victoria pineapples, clementines, oranges, fresh lamb's lettuce and mushrooms did well.” For the managers of this business, which has found its customers again and is gaining new ones, the temperature difference is obvious: “It's less cold, it's more comfortable.” Their turnover has also changed: “Before, in the old market halls I necessarily made a better figure, because the stall was twice as big…” The only downside to this reopening is the complaints heard about the prices charged in the market halls. “People complain that it's expensive. A lady told me that her friends who were passing through were offended by the prices, compared to before.” “It's true that there are products with slightly high prices, notes Julien Escrihuela, her husband, and it's a bit of a shame.”
“Customers are looking for advice, need to be guided”
A newcomer, Jérémy Gernez, who runs the fish shop, has noticed a change in customer habits. They improvise more and are looking for advice: “We really need to be proactive, on recipes, preparation… Customers, all generations combined, need to be guided.” While he has not yet reached his ideal turnover, he is counting on this weekend and “improvised meals and aperitifs with friends or family. This is often organized at the last minute.” For this first Christmas in the market halls, he prepared like an athlete: “Minus the physical, but with the mental, is he having fun, we don't drink alcohol, we eat healthily and we sleep as soon as possible”.
