“L'esperluète”, this Aveyron knife awarded a silver medal at the Lépine competition

A cutler working in the shadows in Rieupeyroux, Patrice Graffand finds himself in the spotlight with his folding kitchen knife “L'esperluète” which won a silver medal at the Lépine competition. “It started with a meeting with Étienne Rozès, founder of Le Cuisinier français, who has since become a friend, who heard about my work and came to talk to me about his project for a nomadic kitchen knife“, says this self-taught cutler who loves challenges.

A nomadic and folding knife

This is how “L'esperluète” was born, the difficulty of which was to design “a blade longer than the handle with a significant heel”, explains Patrice Graffand in his lair at Forges de Modulance. The name of the knife came to him during the discussion with Étienne Rozès. A nomadic and folding knife and kitchen knife, etc. The symbol of this coordinating conjunction has become its logo.

The variation of a range

Designed in Rieupeyroux, “L’esperluète” was manufactured in Thiers and can now be found with starred chefs, starting with Christophe Aribert in the Alps.
