To successfully complete his project of a laboratory with a producer store and snack restaurant in Sérignan, the craftsman took a new step at the end of the year. Several months ago, he had come up against an appeal brought by the director of the neighboring Carrefour hypermarket, concerning the favorable opinion of the CDAC (the Departmental Commission for Commercial Development). Since then, he has embodied a form of resistance to large-scale distribution. The building permit is also likely to be attacked for two months.

On December 24, Valentin Garcia received a nice Christmas present, the building permit he had been waiting for weeks. An essential document for the realization of his project: the construction of a vast 450 m2 laboratory, a producers' store and a snack restaurant. All on a plot of land of nearly 900 m2 located on the Zac de Bellegarde, in Sérignan, not far from the Carrefour hypermarket…

For the artisan baker, this is therefore good news. For months, he has been explaining that this program is the only way to ensure “the viability of his craft businesses in the city center, in Valras, Sérignan, Lespignan and to plan for the future”. His idea for Maison Garcia: “Centralize the production of pastries, cakes and even catering dishes, while the bakers will remain in each structure.”A way to optimize and pool production costs to better cope with a significant drop in business volume during the low season. Valentin Garcia, who works with his family, employs 35 employees in the winter, up to fifty in the summer.

And if we talk about him like this, it is because he came up against an appeal filed with the Departmental Commission for Commercial Development (CDAC) by the manager of Carrefour Sérignan. Before winning his case before the National Commission for Commercial Development, in Paris, supported by elected officials from Sérignan but also Senator Hussein Bourgi and the president of the Chamber of Trades and Crafts Christian Poujol. The fight led by the baker has since symbolically become that of craftsmanship against mass distribution.

But nothing is certain yet. The building permit can be appealed for a period of 2 months. Only then will the craftsman and entrepreneur be able to finalize the acquisition of the land from the developer Viaterra, raise the necessary funds and start construction. To be continued.

The overall project includes the construction of a large 450 m2 laboratory where pastries, cakes, chocolates and catering dishes will be made; a 300 m2 producer store and a 150 m2 snack restaurant. “To amortize the lab, you need a store, explained Valentin Garcia. We try to make quality with regional products. There is potential and we do not compete with large retailers because we are not in the same price range! ”
