Sacrilege ? This American start-up is developing a… synthetic butter!

Making synthetic butter from air and water is the challenge that the start-up Savor has taken on. If the concept does not whet the taste buds at first glance, it has been validated by Bill Gates himself.

The Savor process which produces no gas at greenhouse effect

Founded in 2021, Savor aims to produce quality, healthy and affordable fats and oils and above all, without a negative impact on the climate. She first focused on butter, a choice that is not insignificant. According to the Food and Agriculture Organization of the United Nations, the livestock industry, which includes all dairy and livestock farming operations, meat, represents 14.5% of global greenhouse gas emissions.

To create its synthetic products, the start-up started from the observation that all fats are made up of different chains of carbon and hydrogen atoms. His teams then exploited a thermochemical process that produces no greenhouse gases, which consists of taking carbon dioxide from the air and hydrogen from the water.

They are then heated and oxidized, which results in the separation of fatty acids and then the formation of fats, such as those found in milk, cheese , beef and vegetable oils. This technique allowed Savor to design an alternative to butter without any animal exploitation.

According to Bill Gates, who financially supports the start-up, the taste of this product is exactly the same as classic butter. « I tried Savor products and I couldn't believe I wasn't eating real butter ,” he says in a blog post.

An industry struggling to take off

More and more companies offer food artificial. Unfortunately, success is difficult to achieve, as evidenced by the difficulties encountered by Beyond Meat. The company recently found itself in a critical situation. In addition to low demand, the design price of such solutions is particularly high.

« The big challenge is to bring prices down so that products like Savor's become accessible to as many people as possible, either at the same price as animal fats or at a lower price. Savor has a good chance of success because key steps in its fat production process are already working in other industries,” says Gates.< /p>

According to the billionaire, initiatives like those of Savor are essential for reducing the carbon footprint of food. In addition to dairy products and meat, oil production is also disastrous for the environment. The process put in place by the start-up also makes it possible to tackle this problem.
