With their vintage “Le Trésor”, the Vignerons de Sérignan have set the bar high, very high even, and have undoubtedly hit hard on the success scale. This exceptional wine, made from Syrah, is the first of its kind produced by the structure that has been able to draw the quintessence of its terroir and its know-how. All this, at the end of work never before carried out by the Vignerons Sérignanais: “It started with a desire to produce a very high-end wine in the cellar, explains Olivier Cabanis, oenologist and director of the premises. We went as far as possible from our usual practices. The goal is also to highlight our cellar and present our high-end know-how to our customers.”

Syrah plots were thus selected over an area of approximately six hectares, from a handful of winegrowers from the cellar. The objective was to vinify a small volume using the traditional method: “We sought out the best of what we could produce in grapes on our terroir on the Vendre plateaus, notes Olivier Cabanis, who worked on the development of this nectar with Joël Baconin, the usual oenologist of the place. We required our winegrowers not to have more than one hectare so that they could work it very well. There was really particular care given to these plots of Syrah that were selected.”
Yield control, “green” harvesting consisting of only keeping certain bunches of grapes on the vine before choosing the best ones… To produce their Trésor, the Sérignan winegrowers sought out the best possible quality of grapes. This vintage, from the 2023 vintage, was aged for 9 months in wooden barrels.
A confidential vintage
Only 1,384 bottles were produced and in terms of price, they are well above those usually charged for the wines from the cellar: “Our bottles sell for between 5 and 13 euros on average,” Olivier Cabanis says. We are indeed at 34 euros here, but it is truly a confidential vintage.”
Why not with a Forêt black ?
And “exceptional”, according to those who have tasted it, with a particularly powerful nose where, among other things, smells of leather and stone fruits, such as prune, mingle. On the palate, this wine is very complex in terms of aromas with “notes of ripe fruit, mixed with cocoa”. Enough to delight the taste buds while tasting a rib of beef, a venison in sauce or even a tournedos Rossini. Gourmands will even find it suitable to drink it accompanied by a Black Forest!
In any case, it is recommended to taste Le Trésor at a temperature of around 17-18 degrees and not to hesitate to open the bottle at least two hours before.
